It Doesn't Get More Maritime Than This.

So you might be thinking what are those funny looking green things anyways?
They are called fiddleheads! They are the furled frond of a young fern and are cut before the frond opens in late spring. It was not until I moved back to the Maritimes that I was introduced to these little green curly delights. There is actually many health benefits to eating these. They are a source of omega 3 and 6 fatty acids and also contain high amounts of iron and fiber. Some have classed these in the "super foods" category.

So what do I do with them? Well after a good cleaning I typically steam or boil them. Once they are cooked the water is drained and I toss them with a bit of salt, butter and sometimes vinegar.

So traditionally speaking a fiddlehead dinner would not be complete without some Atlantic salmon.  What I like to do is marinate the salmon in about 1/2 cup of soy sauce, pinch of ginger and 3 tablespoons of maple syrup. I let this sit for usually 6-8 hours or less if I am short on time. I transfer the salmon to a baking dish lined with tinfoil and cook at 400F for about 15-20 minutes or until fish flakes. To caramelize the top I broil the fish for a few minutes so it gets nice and golden brown.

When cooked this way the salmon has a sweet taste which means the kids even eat it. As for the fiddleheads my youngest and I like them the most. I guess two out of four isn't that bad.

    1. Yes, they are good. You can only get them for a short period of time so people buy pounds and eat enough to make them not want anymore for another whole year, ha ha. I really appreciate your comment Courtney. Take care!
