Cracker Toffee

WARNING THIS RECIPE IS HIGHLY ADDICTIVE! 
Once you start, you might not be able to stop. This is a recipe I use to make a long time ago with my Mother. I decided to make it with my kids and actually had forgotten how delicious and easy it is to make. It kind of reminds me of a Skor chocolate bar.

Ingredients:

-About 40 salted saltine crackers - enough to line a 1/2 inch edge cookie sheet. 
-1 cup of unsalted butter
-1 cup of packed brown sugar
-2 cups of milk chocolate chips.

Instructions:
1.  Preheat oven to 400 degrees and line your edged pan with parchment paper or tin foil.  Next, line the saltine crackers in a single layer on the cookie sheet. (this is a good job for little ones to do)
2.  In a small pot combine sugar and butter and bring to a boil over medium heat. Once mixture comes to a boil, continue to boil for an additional 2-3 minutes, or until it becomes a dark caramel color. Immediately pour mixture over saltines very carefully covering all the crackers.
3.  Bake at 400 degrees for 5 minutes or until it gets all bubbly.  Remove from heat and immediately sprinkle the chocolate chips over the top and wait a few minutes until the chocolate melts. Once melted you can take a hot knife (my trick) and spread the chocolate evenly over the crackers. 
4.  Once it is completely cooled and the chocolate has hardened, break into pieces and enjoy!
